Chick Pea Burgers - From Scratch

Who doesn't love a good veggie burger!? Once again I found this really amazing, easy, and yummy recipe for a CHICK PEA veggie burger from Emma at From Scratch. She always has the best recipes and idea. Because Emma is a vegetarian I had to veganize the recipe a little since it called for 2 eggs 0___0 no problem cause I just used use water, olive oil, and baking powder to make a little "egg" mixture. It worked out perfect and can I just tell you these burgers came out so delicious and they were for sure nutritious too. haha Aaron loved them and since he is Vegetarian also (not vegan) I added some cheese to his and he was a happy camper! I love trying new recipes but the best part is I get to cross out another item off my SUMMER MANIFESTO list! YAY!! I'm getting there slowing but surely lol If you have some extra time and you want to try something new you should really test this out, it's about 20mins (or less) prep time and about 2 minutes to cook. I also sided our plates with some homemade potato wedges, YUM!

Chick Pea Burgers. Makes around 6 patties. 20min Prep. 2-5min Cook Time.

What you'll need . . .
3 cans of chick peas/garbanzo beans
1 small white onion
1 jalapeno pepper (or your preference)
3 garlic wedges
2 eggs 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
bread crumbs (2 slices of toast chopped up)
salt
pepper
(add your desired spices)

Method . . .
1. Chop the onion, garlic, and Jalapeno Pepper (de-seeded) - put aside.
2. Toast and Chop up bread and put aside.
3. Rinse 2 cans of the chick peas
4. In a blender or food processor blend together chick peas, "egg" mixture, onion, garlic, and the pepper. Do NOT liquefy.
5. Rinse and roughly chop the other can of chickpeas.
6. Pour this mixture into a bowl and add in the remaining chickpeas, bread crumbs, salt, pepper and other spices.
7. Mix together by hand and then divide and shape into patties.
8. Cook in frying pan of hot olive oil for 2-3 minutes on each side. You can also Bake them if you prefer.
9. Put it in a bun or wrap it in lettuces and ENJOY!
