you don't need to kill an animal to have a good time

Recipe was inspired by one of my very favorite VEGAN food blogs, Meet The Shannons

Yesterday we had the perfect, fulling vegan dinner. Karma is a wonderful thing, the karma you get when you don't eat animals, have heart, be smart, go green! ♥ The boys loved it, NO LEFT OVERS! :)

The Betty Crocker Project : Chicken Fingers & Oven Baked Potato Wedges; VEGANIZED!

"Chicken" Fingers
* 2-3 Cups Vegan Chicken (thawed)
* 1/4 Cup Vegan Margarine
* 2 Tablespoons Vegan Herbed Bread Crumbs
(I actually used vegan croutons (seasoned) and smashed them into tiny crumbs)
* 1 Cup Corn Flakes (Crushed)
(in replacement of Corn Flakes I use nutritional yest)
* I also made some extra season in another bowl to give it more favor, I use; sea salt, pepper, onion salt, ground garlic, and mustard seed


Preheat oven to 425. Melt Margarine in an oven safe glass dish.

In a shallow dish, mix Bread Crumbs and crushed Corn Flakes (and seasoning). Cover the Fake Chicken with the melted Margarine and then coat with the Corn Flake mix. After all your "fingers" are coated place them in the oven safe glass dish or pan.
Then bake for about 5-10 minutes. Flip the Fingers over and put back in the oven for another 5-10 minutes. You'll want to remove them from the oven when they are golden brown.

Oven-Fried Potato Wedges:
* 1/4 Teaspoon Salt
* 1/4 Teaspoon Sugar
* 1/2 Teaspoon Paprika
* 1/4 Teaspoon Ground Mustard Seed
* 1/2 Teaspoon Garlic Powder
* 4-5 Red Potatoes ( each cut into 8 wedges - not peeled)
* Olive Oil Cooking Spray


Preheat Oven to 425.

In a bowl, mix Salt, Sugar, Paprika, Mustard Seed and Garlic Powder.

Place Potatoes in an ungreased oven safe glass dish with the skins down and the white part up. Spray with the Olive Oil Cooking Spray until lightly coated. Sprinkle with the Salt mix.

Bake uncovered for 20-30 minutes - until the Potatoes are tender when you pierce them with a fork. You'll need to keep an eye on them since Potato sizes vary.
The salad was also made from scratch, dressing and all. Salad consisted of Dark leaf lettuce and kale. White peaches slices, walnuts, and a from scratch mustard dressing. Dinner is served! :)

That looks delicious, despite the "... have heart" comment that hurt my feelings. I have heart... I just like to eat meat.

ooh my yummies! i swear anthony and i had something very similar for dinner last night, except i just sliced a morning star chik'n patty, but yours looks so much yummier!
