Rain on my Tofu

The rain came back on Saturday and it was a LONG, wet storm! I mean it was pouring rain! So needless to say the day consisted of in door games and puzzles, good eats, tv (Mr. Rodgers), scary movies, crafts and naps!

Morning goodness, Tofu Scramble: (serving for two)
♥ 1/2 lb. firm tofu, patted dry and crumbled
♥ 1/8 tsp. turmeric
♥ 1 tsp. onion powder
♥ 1 tsp. garlic (or more or less)
♥ 1/2 tsp. salt
♥ 1 cup of your favorite vegetables
Place the tofu in a lightly oiled pan and cook over medium heat for 3 minutes. (Until golden) Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked to your liking. That simple!

 In my scramble I used: spinach, tomato, mushrooms, and onions!
  Pat dry Tofu to get as much water out as possible!
Crumble into pan. Looks like eggs, right?! ;) Add seasonings and garlic!
Chop veggies. You really can add whatever you like to this, you can't go wrong, really!
The finished product, topped with my favorite avocado! YUM! and a side of my favorite berries!
